It seems that Dolphin doesn't preview PDF files by default. In order to enable this do:
$ sudo apt-get install kdegraphics-thumbnailers
Then launch Dolphin and do:
Dolphin > Settings > Configure Dolphin > General > Previews: Show previews for PostScript, PDF and DVI Files
